The Bar at Ave combines modern décor with an extraordinary amount of natural light through its picture windows, looking out over the Caribbean Sea.
Take a seat at the bar, and you’ll probably find yourself face-to-face with Trish Rossiene, mixologist and born-and-raised New Yorker.
Trish started in the industry a long time ago when “cocktail bartending wasn’t a thing.”
“My first drinks were mixed drinks, draft beers and fruity ‘90s cocktails at high volume establishments that don’t exist anymore,” she recalls. “I’ve worked at every type of bar in NYC and have seen the culture change time and time again.”
“I have also dabbled in other fields. For example, I worked in the lingerie industry, ran an event company, and did voice overs as a kid for different cartoons.
“In college, I studied to work for the U.N. and other international non-profits and volunteered assisting refugees and victims of child warfare in Darfur and Burma whilst living abroad. I really like taking care of people and I think that’s why I’ve always come back to this industry.”
After many experiences to help inspire and cultivate her career in the bartending industry, including mastering wine and classic cocktails at Anthony Bourdain’s Les Halles Brasserie, Trish has finally stepped outside the limits of NYC and the U.S. and embarked on a new challenge – working in Grand Cayman at the new Kimpton resort.
“I’m really excited to be surrounded by physical natural beauty and gorgeous sunsets,” she says. “I value the Kimpton culture of presenting guests with a place to enjoy good food and drink without being pretentious but being warm and welcoming.”
Lavender Thyme Bees Knees
* 2 ounces Hendrick’s Gin
* 3/4 ounce Honey Syrup
* 3/4 ounce Lemon Juice
* 3 drops house-made lavender tincture
* 2 sprigs of thyme muddled
Shake all the ingredients together and double strain into a coupe cocktail glass. Garnish with a thyme sprig.
